Is there a maximum number of datastores that can be created in an environment? Is this a vCenter maximum or is it determined based off of the host?
Look here
it depends on the type of storage your using. Look at the notes next to each one, in general its 1024 datastores for a 32 node cluster.

I am facing an issue where someone has created a datastore for each virtual machine (shared from a SAN). At what point will we not be able to create any more datastores, thus VMs, with this setup? sjesse
I cannot tell you because I'd need to know a lot more about your setup. If you have 4 paths per datastore and are on 6.7 and you have a cluster of 32 nodes or less, and are using iscsi or fiber channel, you can have up to 1024. If your using nfs datastores its a lot less I think 256. Each version has less, you need to work with your storage admins and use the config max tool to figure out the max for your setup.
In my environment we have 8 paths per datastore and we are on 6.5 so we can only have 256.
