After configuring the networks in Virtual Network Editor such that the 'Type' is 'Host-only' and clicking on 'Apply', it takes a couple of minutes for the configuration changes to be applied. But it immediately automatically changes to 'Custom' as shown below. Tried multiple times. What could be the reason for that? (Version: 14.0.0 build-6661328)

First off, update to the latest 14.x build, to apply any bugfixes and security updates.
Second, never try to reassign VMnet0 to something it is not designed for (bridged mode). Just use VMnet1 for host-only, and then any of the other unused VMnets (2-7, 9) for any custom switches.
Yes, I did for all three of them. (VMnet0, VMnet1, VMnet2). The type changes to "Host-only" as soon as I put the flag, but changes to "Custom" after I click on "Ok" or "Apply".
I updated to the latest version, removed all networks, and added new "Host-only" networks as shown below. Still they change back to "Custom" after clicking on "Ok" or "Apply".
pressing "apply" applies the change without leaving the screen, while pressing "ok" applies the change and exits the screen.

Looks like your host refuse to create virtual network adapter, send us you C:\Windows\INF\setupapi.dev.log and your installer log %temp%\vminst.log, %temp%vmmsi.log*
make the configuration directly from the network configuration file. I am attaching a guide to make your job easier:
There have two problems inside your log file:
1. Looks like you install Workstation inside one weird postion:
F:\Program Files\Vm ware\netadapter.inf
Do you notice the whitespace between "Vm" and "ware", did you intend to do that? since Workstation UI is one of Win32 application, it should be inside 32bit "Program files" folder.
2. The ROOT\VMWARE\000 virtual device cannot be created. I am not sure this behavior is caused by your some other software or other application.
Try to uninstall workstation firstly, then with 15.1 installer, run following command in one elevated command prompt:
VMware-workstation-full-15.1.0-13591040.exe -r
reboot your computer and try to install the Workstation into the default location.
I uninstalled the Workstation. But didn't understand the next step with the command.
This is one called "repair" command the installer support, it clean up your installed Workstation, and try to find any network configuration error and fix it.
Suppose you downloaded Workstation installer into one folder c:\temp
run cmd as administrator, and goto this folder, then run:
VMware-workstation-full-15.1.0-13591040.exe -r
After that, the installer will ask you to reboot if it run success.
Reboot the host, and double click the installer to install Workstation again.
I tried, still not working. Another thing I noticed during installation and repair process is, it takes a longer time when "Installing the virtual network drivers". Also the VMware network adapter is not getting installed after the process. I'm attaching the screenshots.
Thank you everyone for the replies and inputs but I guess the issue is not with VMware but with my OS. I tried installing Workstation 14 and 15 multiple times, tried installing VirtualBox and tried enable Hyper-V but none of them works. The virtual network adapter is not getting installed. Probably an issue with my OS.
