You can use below stencils to create your infrastructure design

The Unofficial VMware Visio Stencils | Technodrone

Do you need a live diagram to recognize every change inside your VI?! or something to draw only?

Drawing can be made by E-Draw and Microsoft Visio. Visio have many stencils about VMware vSphere. (for example: Visio Stencils for the VMware Validated Designs  for VMware SDDC VD) or Official VMware Visio Stencils & Icons for 2018 – VirtualG.uk

And about live diagram you can have it inside many Virtualization Monitoring products like VMware VROM or Solarwinds VMAN .... to show current state of your VI
