I am assessing the feasibility of using vSAN for my environment. I have ran the procedures on encrypting the cluster. However, it is taking a long time (estimated completion time of 10 days). Is this normal? AES-NI is enabled, have a hybrid cluster, 225TB space.

You are encrypting an exciting environment filled with data (225TB)? Yes that will take a significant amount of time as every diskgroup will need to be formatted, data moved etc.
