I am looking through the API calls in the vCenter 6.5 API documentation. I don't see anything in there about an API for snapshot creation. Is there one that is available and if so, where is the information for that API located at?

It's in the Web Services API. The newer REST API doesn't have anything for snapshots that I've seen.
