I have a log insight 4.6 VM with a 512GB drive. Can I just increase the 512 GB drive to 1 TB or larger (max 2TB) drive to increase disk space or will it only adapt to additional disks added?

No, you should never try to expand an existing disk. You must always add a new disk to vRLI.
