Is it possible to build a clone without including all the partitions ?
On my side, one VM is running backup (veeam), on a third ESXi, inside a Vcenter.
One of the partition is very big (more than 1,4 Tb).
The goal is not to include all the backup files (veeam) inside the clone.

For simple and easy way, I would use the VMware Standalone Converter where you get choice which disk you want to include and exclude.
Another option you have, shutdown VM > remove that large VMDK disk from VM settings (Just remove, don't delete) > Clone VM > reattach disk to newly created VM.
For second step, note down the VMDK path (inside the VM folder) to locate and attach after cloning.
VM converter is not inside Vcenter, but it's an interesting choice ...
