esxtop is a real-time monitoring tool. It does not save historical data, so you'll need to get this from vCenter Server's database for the host in question. If you aren't using vCenter Server then this data is not being stored.
ESXTOP is useful to show realtime Statistics. But you can collect informations as you need with specific profil created and add -c option to load your profile with esxtop created earlier.
And you can Export data to csv file for exemple or perhaps, catch them with a specific product. Options -n and -d for time as you need to collect.

I didn't hear something in the past about collecting informations with esxtop in past days. You can show monitoring on vCenter GUI or modify statistics options, but I think It's not as you need.
