It supports several KMS servers that support the 1.1 protocol, so anything that is KMIP 1.1 compliant can be used.

KMS servers will be used to store the Key Encryption Keys (KEK), but I'm more curious to know if vSphere supports third party application to generate disk encryption key (DEK) to encrypt virtual machines and disks.

No, only what's in the KMS server.
