1. Read the Upgrade guide

2. check compatibility between vSphere version and your hardware

3. check compatibility between vSphere version and other products (like BACKUP, storage integration plugins, monitoring, VDI, whatever)

4. update vCenter

5. update ESXi hosts (I'd use update manager)

vSphere 6.5U2 and 6.7 have just been released, We use Veeam Backup; Veeam 9.5U3 doesn't support 6.5U2 yet but probably will work (they are testing); it doesn't work with 6.7. So - no update in production yet. What I do in my lab is my problem anyway.

Hello,

If you are looking for upgrading your ESXi server from 6.0 to 6.0 U2. you should use update manager to complete this task. A step by step instruction is here..

Sure, you can update the hosts without Update Manager. I like to use this website: https://esxi-patches.v-front.de/ESXi-6.0.0.html

Just click on the Imageprofile of the version you are aiming to update to and follow the instructions in the window that'll pop up.
