What are difference between vCenter U3, (a) and (b)

We're facing most of vSAN issues in ESXi 6.0 U2 ( 4600944 ).So, we planned to update ESXi 6.0 U3 (5572656).Before we update ESXi U3, which version do we need to update for vCenter Server (Windows).

vCenter 6.0 u3 is a major version upgrade but 3a and 3b are minor patch update/bug fixes. as long as the vCenter is 6.0 U3 it will support the ESXi 6.0 U3.

I would recommend you to check the vCenter release notes to identify some of the known issues and co-relate with your environment whether those known issues are expected in your environment or not.

If you are upgrading ESXi to 6.0 U3, then your vCenter should be in 6.0.0 U2  and above.
