Does anyone know how to get a VM's stats for bandwidth used either GB transferred or average throughput in Mbps?

You can use Solarwind Free VM Monitor. This will provide you comprehensive view/reports of resources utilization including Network for individual machines.

Unfortunately the latest version of vCloud Director still doesn't provide network stats via API. You can play with vSphere SDK.
