I have an ESXi host 5.0 and I want to change the current license by a evaluation mode license. The evaluation mode license is expired.
How should I proceed to reset the evaluation license?

You couldn't... alternatives are (other than alternative license code):
- ask vmware sales account for an evaluation code
- reinstall... remember that you could use this method for lab purpose
