Is it advisable to use the latest standalone converter from ESXi 6 with an ESXi 5.5 environment for P2V conversions?
Obviously it won't support any new features of 6 but would it add bug fixes and improvements over the 5.5 standalone converter?
Since Converter version 6.0 supports ESX(i) 4.0 and later versions as targets (assuming your source operating systems are supported), I'd go with this version. If something doesn't work - for whatever reasons - you can still try an older version.
