I think the best document overall is probably the NSXv 2.1 Design guide (not sure if VCP-NV covers 6.1 or not yet so potentially some extra not needed there) so I would read that several times plus you can work through the blueprint objectives using the materials in the NSX Documentation Center/publicly available PDFs. If you don't have access to the NSX binaries for home lab work then you can run through most stuff in the VMware Hands on Labs (deviate from the script where you need to). As far as I'm aware Pluralsight.com are the only people who have some video training so far. I notice there is an official VMware press cert guide to be published in July by Elver Sena Sosa which will no doubt be very good based on my experience with his teaching, if you can wait that long.
Alternatively if you have a decent amount of hands on experience and work with the product in your day job I would consider just sitting the exam.
Hi,
Check VMWorld 2013-2014 sessions videos, I think they are open.
check the VCP-NV from vBrownbag
check this guide : https://richdowling.wordpress.com/vcp-nv/
get all the HOLs from vSphere networking and NSX, over and over again.
and practice all the points from vcp-nv exam blue print.
With that I think you will be OK
regards
