Has anyone seen a good health check script that will also monitor when a NIC goes down. We currently have multiple 10gb NICs in our environment, and from time to time they go down. Or if you have a better idea please let me know.

I would use vCenter alerts so you get notified immediately.
If it's like an every 24 hour thing, then I suggest looking into the vCheck Script.
