I thought I had found the reason why some users were experiencing problems installing Snow Leopard Server guests in VMware Fusion on late model Macs. I was wrong. What I learned today was that I had made a subtle error when I created the disc images of Snow Leopard Server install disc. The images I created appeared to startup correctly, but then failed before the installer window appeared.
If you use Disk Utility to convert your Snow Leopard Server installer DVD to a disc image file, you must select the DRIVE icon, not the disc icon below it. That applies to any DVD or CD that you convert to a disc image file, of course.

Did you try my instructions for Creating a disc image from physical Mac OS X install media? It is quite easy to create a functional image using Apple's Disk Utility, but you have to be a bit careful! It's not necessary to use any 3rd-party software.

Darius - Thank you for pointing out the link with the helpful step-by-step screen captures. I was not aware of it before.
As pointed out in your instructions, the user must select the DRIVE in Disk Utility, not the "disc" below the drive. That is what I failed to do.
I ran quite a few tests today, and confirmed your instructions to the letter. Thank you for pointing out my error. My apologies to those who may have been misled by my mistake. I will edit my post above accordingly.
