You can try something like this..
In vSphere client, change to VMs and Templates view.
From there create a folder unless you already have one and move the VMs in question to that folder. (you can also select a host, it doesnt have to be a folder).
From the top pane, select virtual machines after the folder or host is selected. You can highlight more than one VM and right click -> guest -> install/upgrade VMware tools.

For your first question, foll this vSphere Documentation Center
For your second question, Go to Host virtual machine panel. Select all the virtual machine where you want to update or install vmware tools by ctrl+left click. After selecting all right click on any vm and choose either to update or install vmware tools. This will mount vmware tools to all the virtual machines.
