best practice for resiliant deployment using only one ESXi host

Just wondering if anybody had some advice or of a guide for deploying ESXi in an environment without using a cluster. If cost was not a factor I would put it into a pool but this can't be done. So assuming there is one ESXi host with multiple NICs what would be a good way of covering areas like backup and recovery when using the free version? The machines that would run on this are not mission critical so there is a fairly good time that the machines could be down without causing any issues, however, I want to be sure that if the machine were to blow up then there would be a way to recover the VMs that were running on it.

Ideas?
