Nice guide! however I do have questions on this.. maybe you can capture this information and update the guide as well.

1) What happens to the SSO users and identity sources in 1.0? Do these get migrated?

2) What happens if the SSO 1.0 was using an oracle DB? Do these get migrated?

Yes,SSO Users/groups will be migrated to SSO2.0

Identity sources are also migrated but those are native domain identity sources and trusted domain identity sources. But if there are some Identity sources not migrated after upgrade, you can still add those manually.

2) What happens if the SSO 1.0 was using an oracle DB? Do these get migrated?

In vSphere 5.5 there is no external SSO DB. So during upgrade all your data will be migrated to SSO 2.0 which uses Lotus to store Data
