I recently setup vcenter 5.1.0a. I ended up installing Dell's version of ESXi 5.1.0 which I found out later wasn't the 5.1.0.a build. It's strictly 5.1.0. With the new 5.1.0b out now, is it a lot of work to go through the upgrade process? Is it worth it?

If you refering to vCenter Server upgrade from 5.1.0a to 5.1.0b, then it's really simple. I've already done this for a couple of customers. No errors during the upgrade. No SSL certificate errors and so on.

How about the hosts? Do you have them running 5.1.0, 5.1.0a. Do you think a 5.1.0b will be out soon?
The hosts are running ESXi 5.1.0 build 799733, there was no reason for an upgrade at that time.
The main reason that we upgraded to vCenter Server 5.1.0b is by request of VMware Support for troubleshooting various isses we had.

No Host update has been released for vSphere 5.1 and only vCenter updates has been released. However there were some pathces released for ESXi 5.1 and the latest build bumber is 914609. If you wish you could get the installed on the ESXi 5.1 hosts
So is it just vCenter Server that needs to be upgraded? Or do I have to run the install for SSO, vCenter Inventory Service, etc
Yes, only the vCenter Server with all components. SSO, Inventory Service, Update Manager, vSphere Client, Web Clients etc. In my case, the simple installer didn't work so I had to update each component separately.
