How to properly protect a VMware vSphere server with VMware View running? Our RPO/RTO is ideally < 2 hrs?

Haven't seen any specific guides. There are some 3rd party examples that might give you some ideas. Also vCenter Heartbeat supports the View Composer component.
Bit old (2009) but worth a read:
Maybe the next release of view might address this? If you're using Roaming Profiles then you just need a way to replicate these to DR and point users at the DR View Pool, that cutover would just take a DNS change. Dealing with linked clones and persistent drives makes it a lot tricker.
I would consider the XP VMs themselves throw away items, it's the user personalisation you need to reproduce for them in DR.
