so I'm planning using Centos 5 as a permanent web server through VMware Fusion.
The goal is to be able to back up every little pieces (MySQL database, web files, configurations...) of a webserver in one shot.
My worries...
Do I have to log in to lauch VMware Fusion?
Can I log out and keep VMware Fusion up and running?

Although VMware Fusion isn't designed through its UI to provide running as a Virtual Machine as a Service nonetheless yes you can do what you're asking.

Use the information in "Starting a Virtual Machine without User Login" to start the Virtual Machine and the suspend method in the "Shutdown/Suspend Virtual Machine upon Mac OS X Reboot/Shutdown" section.
