We currently have a farm with 3 ESX servers (vshpere) and are looking to do offsite backup or Replication for DR purposes.
what are our options? can we use 1 ESXi server for offsite and somehow replicate of backup to that? is there such feature?
If not, what are some other cost-effective ways of achieving this?

This might be a bit of a late response but hopefully you'll find this helpful
Veeam is an awesome product for backup and replication, and also much cheaper and easier to implement than SRM
Veeam Backup and Replication 5.0 is due for release soon, they are only waiting for a pending patent right on a new technology
Also they have joined forces with HyperIP to make WAN replication even
faster with WAN acceleration and they also mention with these 2
technologies WAN vMotion will be seamless.

Yes, we are definitely on the same track. We've been looking at Veem for some time right now. We'll prob request a demo or a trial to find out more.

Yes, we have 3 clients running Veeam Backup and replication, and I installed them all.
Like I said, very cool and user-friendly piece of software.
Have not worked with ver 5.0 yet, but i'm actually installing and testing this for a client next week.
I will also be playing around with the Hyper IP
