although MS appears to have changed the VMC for Virtual Server 2007 so as not to import into VMWare.

Blame Microsoft for changing their webpage. The VMWare page only links to MS' download. The link I posted above is still working. (And VMWare Workstation 6 / Converter 3 does successfully import the appliance.)
