I have used VMware Education classes in the past and they are very good. The only downside is the cost and there may be a wait to take the next available class.

As an alternative, I suggest you checkout my VMware ESX Server video training course. It is a 17 hour course and for $397 it is a great deal compared to classroom training. I will be releasing a new longer course later this summer covering ESX 4 and vSphere.
