Where are the VM files stored on the ESXi? How do I get to them so I can put those vm's possibly on another machine

or back them up if my ESXi box goes down?

Login to your ESXi with your Vmware Infrastructure Client.

Highlight your host (the ESXi server) in the left pane, then click on Summary in the right pane.
Double-click your DataStore and the Datastore browser will load. With this you can download/upload files.
