I'm planning on retiring some well overdue hardware in production by end of year but my allowed budget is very limited. I have used VMWare Server in the past with great results but I am totally new to ESX. My plan is to get an HP ML370 (Xeon 3.0 X 2 - 8 cores), 8GB RAM, 1TB SAS, I would like to run ESX on it and initially it would run about 5 virtual NT boxes. My question is, down the line when I get a go ahead for more hardware and add 2 more of these servers will I then be able to cluster for HA? or is that something that has to be setup right away?

Yes you will be able to cluster for HA later and do not need to set it now. HA will need SAN storage. I think you can get it running on local shared storage but then if a server goes down so do the VM's on it. If your budget is limited you may want to get a foundation license instead of enterprise if you don't plan on a SAN and cluster until after next year. Also keep an eye on your memory, i have had to upgrade memory on all my hosts due to demand for easily deployed servers.

The server hardware sounds pretty good, I would try to increase the RAM if possible. Your 5 NT boxes will run fine with 8 GB but going forward you'll want/need more. If necessary, dial down the proccessors. Two Quad-Cores per box should be plenty. Especially if they're the new Nehalem procs. The other issue you'll run into is that almost any ESX feature will require you to have the VMs on shared storage. Either a SAN or NAS with FC, iSCSI, or NFS. HA, DRS, DPM, or FT won't work with the VMs on local storage. My reccommendation would be to scale back on the 1TB of local storage and go with a mid to high-end NAS.
