I have installed VM Update Manager with the defaults and the default download location looks like "C:\Documents and Settings\All Users\Application Data\VMware\VMware Update Manager\Data" Is there anyway of changing this?

You could try uninstalling then reinstalling UM.
Havn't tried this personally, but I've heard it works:
Stop update manager service
Copy everything from c:\Documents and Settings\All Users\Application Data\VMware\VMware Update Manager\Data to your new directory
Edit c:\Program Files\VMware\Infrastructure\Update Manager\vci-integrity.xml file
Change the following two lines to point to your new destination
<path>C:\Documents and Settings\All Users\Application Data\VMware\VMware Update Manager\Data\</path>
<patchStore>C:\Documents and Settings\All Users\Application Data\VMware\VMware Update Manager\Data\</patchStore>
5. Start update manager service
I just tried moving my "VMware Update Manager\Data" folder, and now when I start the VMware Update Manager service, the service status is stuck at "Starting". Rebooting the server doesn't help. I'll call support and let you know how it turns out.

This is documented under VMware KB article 1004152. The one trick is that, after you edit the vci-integrity.xml file and move the Data folder, you have to keep an empty Data folder in its original location (C:\Documents and Settings\All Users\Application Data\VMware\VMware Update Manager\Data\). The first time I tried this I deleted the Data folder and that's why the service wouldn't start back up.
Does anyone know if you can specify a UNC path to a remote share for the new download location?
UNC works for me.
