I would like to have an easy way to export the missing patch information from VUM to some kind of delimited file. It would make it much easier from a change management perspective (as well as a few others) to be able to generate something I can bring into Excel to show the patches missing for each virtual server. WSUS and Shavlik already do this with their products.

Though not a complete export functionality, try right clicking in the empty space in the Compliance view in Update Manager and select "Export List..." Lets you export the compliance view as html, csv, xls etc.

I found out that your suggested solution does not work in VUM 4.0. So I contacted VMware engineering and got this answer: "You can use the DB view VUMV_ENTITY_SCAN_RESULTS to get the scan results data but i am not aware of any way from the UI to export compliance data."
