Looks like for the moment my problems were based around some form of Incompatibility Issue between the Asus P5K SE Motherboard and Windows 2008 R2 (RTM) and not something to do with VMware, as i had uninstalled VMware and was sitll having issues copying from the host PC. (Doh).

However, now i have re-installed using standard Win2k8 Server 64Bit (RTM) and no longer have issues copying files to and from the host.

What the difference between different vNICs in vSphere?

This is a good article about vNIC types. Need to note that all of them you can add manually.

Amaizing it works fine for me on Vmware Fusion but on Vmware Server 2.01 or Vmware Workstation 6 it's nothing but hassle. On fusion all hardware installed and tools installed without a problem but on server I'm having real trouble installing the network I had to ignore the error when using the Have disk method and sometimes it still won't configure the nic correctly. I know Vmware must be busy at the moment playing catchup to Apple and Microsoft with their OS updates but both Leopard (Apples new OS) and Windows 7(2008 R2) have been around sometime now both with developers and corporates. Come on Vmware Fusions working better than server and workstation but it's not completely working either.

I am able to freeze 2008 R2 on VMWare Server 2.0.1 every time I do the following:

right-click desktop->Personalize->Screen Saver->Change Power Settings->Change Plan Settings->Change Advanced Power Settings->Expand (+) an item such as "Display".

During the expand of an item on the Power Options Dialog, Windows 2008 R2 freezes up completely and does not recover, requiring a restart of the VM to work agian.

It also freezes elsewhere occasionally, though I have not determined how to reproduce it elsewhere.
