I would like to setup a lab system with vSphere (I am new to ESX and wanna learn). I am having problems finding an affordable system to play with. Per the VMWare compatibilty matrix, Dell 2850/1850's both work, as long as you have a Prestonia or Gallatin CPU. I can't find any of those out there on the used market, but have found plenty with Nocona or Irwindale CPU's, both which are newer then the prestonia or gallatin. Will these work with vSphere? If not, any suggestions on an affordable system to buy?

Hopefully you've sorted out your needs already, but we have ESX 4.0 running on Irwindale PE 2850s without a problem. Yes, it's not on the HCL so I wouldn't use it in production, but it'll run in your lab. Technically the Irwindale is x86_64, but an early implementation and no VT (so you won't be able to run x64 guests on it).
