1. In BIOS, change AHCI to ATA

2. Pop in ESXi CD and install

3. Follow the how to install ESXi to IDE drive from VM-Help.com

4. Complete !

Thanks for the info, but I'm not really understanding why you'd want to do this. If you're doing it to demo ESXi for clients then wouldn't installing it into VMWare Workstation or Server be a better (and more cost-effective) solution?
