If we are taking scotch orders - Mine would Glenmorangie in a Sauternne Cask or a 25 Year Old Springbank - neat with a ice water on the side

A fair vintage, but a little too fruity for my tastes :)

not tried a Springbank, but the write up on Whisky Merchants peaks my interest enough to buy a bottle, I might get a Hazelburn as well,

Hello,

I have some Cognac in the stores... Courvoisier XO... Once I finish this bottle (it was a gift) I will have to march on to another one... Not sure which one actually....

But a good single malt scotch I would not turn down. Neat with just a 'drop' of water.
